Easy Step-by-Step

  1. Heat the oven to 400°F.
  2. Add the chicken and zucchini to a large bowl.
  3. Pour in the olive oil and lemon juice.
  4. Add the garlic, oregano, basil, salt, and black pepper.
  5. Toss everything well so the chicken and zucchini are evenly coated.
  6. Spread the mixture into a 9x13 baking dish.
  7. Sprinkle the mozzarella and Parmesan over the top.
  8. Bake uncovered for 25 to 30 minutes, until the chicken reaches 165°F and the cheese is lightly golden.
  9. Let it rest for 5 minutes, then top with chopped parsley.
  10. Divide into meal prep containers and cool before sealing.
