Easy Step-by-Step
- Heat the oven to 400°F.
- Add the chicken and zucchini to a large bowl.
- Pour in the olive oil and lemon juice.
- Add the garlic, oregano, basil, salt, and black pepper.
- Toss everything well so the chicken and zucchini are evenly coated.
- Spread the mixture into a 9x13 baking dish.
- Sprinkle the mozzarella and Parmesan over the top.
- Bake uncovered for 25 to 30 minutes, until the chicken reaches 165°F and the cheese is lightly golden.
- Let it rest for 5 minutes, then top with chopped parsley.
- Divide into meal prep containers and cool before sealing.
